- Spinach
- Onion
- Red bell pepper
- Egg whites
- Grated parmesan cheese
- Deli sliced ham
Preparation
- Sautee all veggies, set aside
- Line a muffin baking pan with the ham slices, spoon 2 tbsp veggie mix into each cup, pour over the egg white and top with cheese
- Bake at 375 F for 20m or until egg is cooked through
