Classic Rataouille

Ingredients
- 2 red onions
- 4 cloves of garlic
- 3 zucchini
- 3 eggplant
- 3 red / yellow peppers
- 6 tomatoes
- basil
- olive oil
- thyme
- 1 x 400g tin plum tomatoes
- 1 tablespoon balsamic vinegar
- 1/2 lemon (for zest)
Preparation
- Prep ingredients - cut onions into wedges, finely slice garlic, chop eggplant + zucchini + peppers, rough chop tomatoes.
- Heat oil to large casserole pan / saucepan on medium, add eggplant, zucchini + peppers (maybe in batches) and fry for 5m till golden and softened. Store in a large bowl.
- Add onion, garlic, basil + thyme with oil if needed. Fry for 10 to 15m until softened + golden.
- Put veg back into pan, stir in fresh and tinned tomatoes, balsamic and salt and pepper.
- Mix well, breaking up the tomatoes with spoon. Cover and simmer over low for 30~35m, until reduced, sticky and sweet.
- Add in basil and lemon zest, taste and adjust seasoning.
- Serve with bread or rice.
