Classic Rataouille

Preparation

  1. Prep ingredients - cut onions into wedges, finely slice garlic, chop eggplant + zucchini + peppers, rough chop tomatoes.
  2. Heat oil to large casserole pan / saucepan on medium, add eggplant, zucchini + peppers (maybe in batches) and fry for 5m till golden and softened. Store in a large bowl.
  3. Add onion, garlic, basil + thyme with oil if needed. Fry for 10 to 15m until softened + golden.
  4. Put veg back into pan, stir in fresh and tinned tomatoes, balsamic and salt and pepper.
  5. Mix well, breaking up the tomatoes with spoon. Cover and simmer over low for 30~35m, until reduced, sticky and sweet.
  6. Add in basil and lemon zest, taste and adjust seasoning.
  7. Serve with bread or rice.
